It’s officially summer! I hope you all have fun summers ahead full of family, vacations and most of all – delicious food! We are in the summer swing over here with splash pads, family trips, and plenty of homemade popsicles. The pie is a fresh strawberry pie I made for my sister-in-law’s birthday. It had a pretzel crust and we served it with fresh whipped cream. So good!
My favorite oatmeal combination lately – steel cut oats, almond butter, blueberry chia jam, coconut sugar, and toasted almonds. I post everyday food like this @meaningfuleats on instagram! I am also meaningfuleats on snap chat.

This Lentil Soup from Cookie and Kate is delicious! I live at altitude so I soaked my lentils overnight before making it and increased the cooking time.
I found these gluten-free buckwheat ramen noodles on Amazon and have been on a big kick making healthier ramen. Each noodle nest has 10 grams of protein and 5 grams of fiber! I make my own vegetable boullion from this recipe and add shredded cabbage, soy sauce, jalapenos, miso, green onions, garlic and ginger. So yummy! And convenient because my son discovered regular ramen at a friend’s house and likes this (without all the extra add-ins) just as much.

This past weekend one of my husband’s best friends got married and all his college friends came in town. Nate and I met in college and it was so fun to catch up with old friends. We had brunch at our house the morning before the wedding. I made breakfast casserole with all the toppings, bacon, fruit, pumpkin chocolate chip bread, and lemon pound cake (from this book) – all gluten-free but nobody would guess!
Nothing like going to a wedding to bring back all the feelings! Love this guy!
