Wow! After putting this post together all I want to do is relive this month so I can eat everything from December again. So much deliciousness.
It was a magical Christmas with our little boys this year. Being a parent makes the holidays more fun in ways I could never have imagined. My 4-year-old Scott is learning to read/write and wrote his own letter to Santa this year (with my help!). He had seen this “Santa Mail” at a shopping center a few weeks earlier and couldn’t wait to mail it. I secretly wanted to keep his cute letter full of wobbly letters in thick marker, but he was so excited about mailing it, it was worth it.
Hello best gluten-free burrito of my life. Many moons ago I would have a twice-a-year Taco Bell craving. Obviously I’m not doing any drive-through runs these days, but this was insanely delicious- and way more wholesome! I’ll share the recipe soon.

A gluten-free bagel spread with Kite Hill almond chive cream cheese, soft-boiled eggs, 1/2 an avocado, an orange and roobios tea for breakfast one morning. I was full for hours, but feel so good when I eat a big breakfast.
I’m not the most crafty person, so this Pinterest moment needed to be documented. I made these wreaths for our big living room windows one afternoon. They are just an embroidery hoop and fake greens with a glue gun. I like crafts that rely on glue guns rather than real crafting skills. I got the idea here.
Chocolate Banana Protein Shake! 1 1/4 cup homemade almond milk, 1/4 an avocado, 1 frozen banana (I break it into about 4 pieces before freezing to make it easier on the blender), 3 ice cubes and 2 tablespoons each of ground flaxseed, almond butter, Great Lakes powdered gelatin (in the green conatiner), and a splash of maple syrup.

Serious snowman builders. This used almost all the snow in our little yard. We moved from San Diego to Utah this summer for my husband’s job. My son is loving the seasons and snow! I grew up in Virginia and love seasons too. I also love snow before Christmas, but get sick of it when it’s dirty and still piled high in parking lots come March. I’m sure we’ll be missing San Diego then!
Almond flour sugar cookies ready to frost for Santa! I’ve made these every year for 3 years now. They are always a hit.
I made Christmas Eve dinner for the family get-together this year. We had gluten-free lasagna, herbed rosemary focaccia, a big salad, and cranberry marshamallow pomegranate salad. I served the focaccia with good olive oil for dipping. I could eat it every day of my life.
Christmas morning brunch! Cinnamon rolls, sausage, baked omelette with ham and Gruyere, and fruit salad. I have no joke tried making gluten-free cinnamon rolls about 15 times. Every time I tweak and try a new recipe. They are so tricky! I finally nailed it! I even made them the day before and let them sit in the fridge overnight and baked them in the morning and they still worked. I told my husband it was a Christmas miracle. I’ll have to share the recipe soon!
My Dad made dinner Christmas day. He loves to make German food and made a beef slow-cooked in a red wine sauce with homemade gluten-free spaetzle (German egg noodles), pickled cabbage and sauerkraut, and green beans. So delicious!
I made this chocolate pudding pretzel pie for Thanksgiving and Christmas day dessert and it might be my favorite dessert in the entire world now. I need to share the recipe, but just can’t do that to you guys (or myself) in January!

Amazing Gluten-Free Vanilla Bean Cheesecake that my Mom made! We realized that the recipe we often made for Thanksgiving when I was growing up was already gluten-free. It has a walnut crust. This definitely maxed out my dairy intake for the week. But it was well worth it!
