I was scrolling through the photos on my phone a few weeks ago and realized there is so much food I eat that never makes it onto this blog! I also realized I am totally that person who only takes pictures of food and babies. So be warned – if you are food or baby averse read no further!
I’ve decided to do a monthly recap post of all the food photos from my phone, and some of life in-between. This is really just an outlet for my crazy food-photo hoarding self. In addition to writing a blog, I love reading food blogs as well. I’ll link back to recipes from blogs I’ve made and loved in these pictures!
I finally bought a spiralizer. I’m pretty sure I’m the last gluten-free person on the planet to buy one. We have been happily spiralizing (totally a verb now) our days away over here now. Above are some russet potatoes I peeled then spiralized. I tossed them with olive oil, seasoned salt, onion powder, garlic powder, and pepper. Then I roasted them at 400F, turning every 15 minutes until they were crispy. Life-changing delicious!
This (along with my favorite classic potato salad) was my contribution to our 4th of July family get-together. It is a berry tart with coconut pastry cream from this cookbook. I know I’ll make the pastry cream again and again. It was stable, smooth, and creamy. The only change I made was to add a little vanilla bean powder and stir in 2 tablespoons of butter at the end. The butter gave it another layer of decadence.
This little guy and I had a quiet 5 days to ourselves while my husband and older son went on a camping trip!
I made these breadsticks in the shape of rolls and added sun-dried tomatoes and kalamata olives for some Sunday dinner guest. They kind of look like cookies in this picture? #foodstylingfail

An easy, not-planned dinner. These potatoes (best potatoes ever!), fried eggs, and steamed green beans with butter/lemon pepper. Yum!

Peaches and blueberries are my two favorite fruits in all the land. Especially when covered in cashew cream.
This salad from Minimalist Baker was pretty darn delicious. I still can’t tell if my husband is converted to kale salads yet. He is usually on board with all things healthy that I make, but always seems to forget to take his portion of the kale salad to work. I don’t mind eating his half too. I’ll also say this forgetting scenario never happens with oatmeal cookies.
It’s alive! I’ve been trying to make my own lacto-fermented vegetables. Carrots with dill and garlic is my favorite combination so far.
An after-church lazy lunch. Tostadas (I like using Trader Joe’s Refried Beans), watermelon, salad, and lacto-fermented carrots.
We’ve been crazy for whole fruit popsicles this summer! Just blend up whatever fruit you like with a little coconut water if needed and layer it into popsicle molds. We like pureed watermelon and pineapple with peach chunks best. My son eats at least 2 everyday which is fine by me because they are all fruit. Also my front stairs are covered in sticky watermelon juice.
One of my go-to lunches is salmon salad made with canned wild Alaskan salmon, mayo (I use the brand Just Mayo), Trader Joe’s relish (no HFCS) and a salt/pepper. I love it over greens with avocado and sunflower seeds.
I made this Slow-Cooker Moroccan Chicken from Against All Grain and it was divine. I’ll definitely make it again!
A take-in meal for my friend who had a baby! I made Creamy Green Chile Enchiladas with Mexican rice, a big green salad with cilantro-lime dressing, and these muffins. Forget pregnancy hungry – I get so hungry in the first few weeks of nursing and waking up with a baby! So I always include some kind of healthier baked good for late-night snacking when I bring a meal to a new mom. I’m good at supporting bad habits like that.
Remember the potatoes I mentioned earlier? I made them again and added zucchini, caramelized onions, and hot sauce. My husband had to work a half-day Saturday and this was perfect for a Saturday lunch/brunch alongside scrambled eggs when he got home.
Hello meal I could eat every week of my life! Roasted sweet potato medallions, slow-cooker pinto beans, gluten-free cornbread muffins, and dairy-free coleslaw.
I’ve been on a huge salad wrap for lunch kick. The tortillas from La Tortilla Factory are my favorite.
We got Scotty some kid-safe kitchen knives to help cook. He loves them! And I love that he can help without worrying.

and PS, you’re not the last GF eater to buy a spiralizer- I havent bought one yet. Sometimes I struggle with being “trendy” and doing what everyone else does especially with food and clothe trends. That was one reason I was in denial about needing to be GF becasue EVERYONE was going GF. Like if your mom asks, “If everyone jumped off a bridge, wuould you?” or “If everyone was buying a spiralizer, would you?” : ) haha! after seeing those potatoes, I think I’ll get one. I’m always looking for new ways to cook potatoes. LOVE your blog and recipes!
I love that you interspersed baby pics with food pics! What a cute baby and what delicious food. I have never heard of a spiralizer. I’m definitely going to look that up.
