BACK TO SCHOOL means back to making SCHOOL LUNCHES! Do you prep for school lunches or just wing it every morning? When I’m on my A-Game (which isn’t every week!) I love prepping some things ahead of time so packing school lunches is quick in the morning.

Lately my son has been liking to switch things up from sandwiches with other things like No-Bake Energy Bites and Deli Skewers. He also loves jerky and homemade gluten-free “lunchables”.

Make-Ahead Gluten-Free Lunch Ideas:

Deli Skewers (ham, cheese, tomato, pepper)

Energy Bites (my favorite recipes are here and here)

Gluten-Free Pasta Salad

Healthy Muffins (Coconut Flour Peanut Butter Banana Muffins)

Once I’ve got some kind of protein in his lunchbox I like to add some fruits and veggies. Peeling/slicing/washing fruits and vegetables ahed of time is a huge time-saver for busy mornings.

I also like to have convenient, healthy options like Dole Mixations and Dole Fruits Bowls on hand to throw in his lunchbox. Sometimes my son will come home with things uneaten in his lunchbox – but that is never the case with Dole Fruit Bowls!

Easy Fruits and Veggies

Cucumbers

Baby Carrots

Snap Peas

Bell Peppers

Dole Fruit Cups

Dole Mixations Fruit Bowls

Grapes

Apple slices

Clementines

What are your favorite things to make-ahead for school lunches?
