Baked Yamples {Sweet Potatoes and Apples in Brown Sugar Sauce}

Ingredients

  • 3 granny smith apples peeled and cut into 1/2-inch slices
  • 2 sweet potatoes peeled and cut into 1/2-inch slices

Sauce:

  • 1/2 tablespoon oil I use coconut oil
  • 1 cup water
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 4 tablespoons butter melted
  • 1 1/2 tablespoons cornstarch or arrowroot powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  • Preheat the oven to 400 degrees. Toss the sweet potatoes with 1/2 tablespoon oil and sprinkle with 1/4 teaspoon salt. Place in a 9x13 pan. Roast for 15 minutes.
  • Whisk together the ingredients for the sauce. Add the sauce mixture and apples to the sweet potatoes and stir. Roast for another hour, until the sweet potatoes and apples are soft and the sauce is bubbly. Serve warm. Enjoy!
