Oreo Rice Krispie Treats (Gluten-Free)

These buttery Oreo rice krispie treats are LOADED with Oreo cookies and gooey marshmallowsThey give classic rice krispie treats a run for their money and are the perfect no-bake dessert!

Ingredients

  • ½ cup (113g) butter, softened
  • 20 ounces (567g) marshmallows, large or mini
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 7 cups (198g) gluten-free crispy rice cereal, see note
  • 20-24 (227-284g) Oreo cookies, coarsely chopped or crushed

Instructions

  • Line a 9×13 pan with foil and spray with cooking spray. Set aside.
  • In a large pot, melt the butter over low heat. Once the butter is melted start to whisk constantly. First the butter will begin to foam, then after a couple of minutes it will begin to brown on the bottom of the saucepan.
  • Once the butter is browned and toasted, add the marshmallows and cook on low, stirring constantly, until mostly melted, a few small lumps here and there are ok.
  • Remove from the heat and stir in the vanilla and salt.
  • Add the cereal and oreos and stir until well-combined.
  • Scrape the mixture into the prepared pan and using lightly greased or barely wet hands, lightly press the mixture into the pan. Let cool for at least 20 minutes before slicing. Enjoy!

Notes

RECIPE NOTES
  • MAKE IT DAIRY-FREE: Use your favorite plant-based butter in place of the butter. Melt the butter (don't brown it) then proceed with the recipe.
  • Be sure to select gluten-free oreos to keep this recipe gluten-free. 
There are several other brands that make certified gluten free crispy rice cereal. Be sure there is no malt flavor listed in the ingredients so the cereal is gluten-free. Rice Krispies in the blue box are NOT gluten-free.
