If need, microwave the gluten-free tortilla for 15 seconds on each side to make it pliable.
Spread the tortilla with hummus. Top with cucumber, avocado, and salt and pepper. Top with olives, pepperoncini, feta cheese, a handful of spinach and a drizzle of olive oil. Wrap and slice. Enjoy!
