Gluten-Free: Use any gluten-free flour blend you like! You don't even have to use a measure-for-measure kind.To Make-Ahead: This roux is best used fresh. The good news is it only takes about 5 minutes!To Store: Store leftover cooled roux in an airtight container in the fridge for up to 3 days. Reheat gently and whisk to recombine. The texture may differ from the fresh roux.To Freeze: Freezing is not recommended.
