Healthy Easter Snacks

Between egg hunts, parties, and Easter baskets all filled with candy, Easter can be a total sugar rush for kids — But you can strike a good balance with these tasty and healthy snacks for Easter!
Adorable and fun-to-make, these healthy snacks are perfect for class parties, playdates and more. Add these easy snacks to your next Easter celebration!

Ingredients

Carrot Hummus Cups

  • Baby carrots
  • Hummus
  • Parsley

Bunny Faces

  • Mini circle cheeses For dairy-free, use vegan cheese
  • Celery
  • Baby carrots
  • A large carrot
  • Mini chocolate chips I like the Enjoy Life brand

Egg Chicks

  • Hard-boiled eggs
  • Mayonnaise 1-2 teaspoons per egg
  • A large carrot
  • Mini chocolate chips I like the Enjoy Life brand
  • Carrots/hummus I use these to help the eggs sit up on the plate

Healthy Crispy Rice Eggs

  • 3/4 cup brown rice syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 4 cups crispy brown rice cereal
  • 1/4 cup peanut butter or almond butter Optional, omit for nut-free

Instructions

Carrot Hummus Cups

  • Fill each little cup (I like these disposable cups) with some hummus.
  • Use a toothpick to make a hole in the top of each baby carrot.
  • Break off small pieces of parsley and put one in each of the holes.
  • Place a few carrots in each hummus cup.

Bunny Faces

  • Cut the baby carrots lengthwise and push each half into the top of a mini circle cheese (repeat with all circle cheeses).
  • Cut a large carrot into little triangles and place one on each circle cheese for noses.
  • Push two mini chocolate chips, pointed side down, into each cheese to give your bunnies eyes.
  • Cut celery into little "whiskers" and push four into each circle cheese.

Egg Chicks

  • Hard-boil eggs and cut each egg at the 1/3 point.
  • Carefully scoop out the yolk. Mash the yolk up with mayonnaise and scoop the mixture back into the larger side of the cooked egg white.
  • Top it with the smaller part of the egg white.
  • Add two mini chocolate chips and carrots cut into little triangles to make the eyes and beak.

Healthy Crispy Rice Eggs

  • Place the brown rice syrup, coconut oil and peanut butter in a saucepan and melt over medium heat until it reaches a simmer. Simmer for 1-2 minutes then remove it from the heat.
  • Add the vanilla and salt, then mix to combine.
  • Add the crispy rice cereal and stir until everything is evenly mixed together.
  • Lightly grease a plastic egg. Using oiled hands, fill the eggs with the crispy rice mixture. It will be sticky and seem like it's falling apart, but pack it in as tightly as you can. It will stay together once it cools.
  • Place the eggs in the freezer (20-30 minutes).
  • Remove the eggs from the molds.
