  • Gluten-free bread flour: Gluten-free bread flour is a key for this recipe! I highly recommend King Arthur Gluten-Free Bread Flour to get the perfect rise and texture!
  • Milk powder: The whole milk powder does something magical to this dough! It adds flavor and helps the buns to bake up golden brown.  It’s also a key ingredient in my reader-favorite gluten-free dinner rolls!
  • Eggs: Not all yeast breads use egg, but they’re necessary in these gluten-free buns to bind the dough. Without the eggs, they can easily become dense.

How to Make Gluten-Free Hamburger Buns

I like to make the dough using a stand mixer with a paddle attachment. Fully mixed, the dough will look like thick cookie dough. That’s totally normal and what you want! That means they’ll bake up nice and light.

Since it is such a wet dough, I’ve found that it works best in mini round cake pans oiled with cooking spray. Once you portion the dough into the pan, wet your fingers and smooth the tops of the buns so they bake evenly rounded on top.

Let the dough rise in a warm place wrapped in oiled plastic wrap until it is visibly puffed up. It will usually take up to 1 hour, then you can move forward topping the buns with the egg wash and sesame seeds (optional).

Gluten-Free Hamburger Buns

Wet Ingredients

  • 2 cups (480ml) warm water
  • 3 large eggs
  • 5 tablespoons (70g) butter melted

Egg Wash

  • 1 large egg
  • 1 tablespoon water
  • pinch of kosher salt
  • sesame seeds for topping

Instructions 

  • Spray a standard mini round cake pan with cooking spray.
  • In the bowl of a stand mixer fitted with the paddle attachment, add the gluten-free bread flour, milk powder, sugar, instant yeast, salt and baking powder. Mix to combine.
  • With the mixer running on low, slowly add the water, eggs and melted butter. Increase the speed to medium and mix for 3 minutes. The dough will resemble thick cookie dough, this is normal.
  • Using an oiled rubber spatula, scrape down the bottom and sides of the bowl and mix again until well-combined.
  • Using an oiled kitchen scoop or large spoon, portion the batter evenly into the prepared mini cake pan. Use wet fingers to smooth the tops of the buns.
  • Cover with oiled plastic wrap and let rise in a warm place for 45-60 minutes.
  • In a small bowl, whisk together the egg, water and pinch of salt for the egg wash.
  • Using a pastry brush, lightly brush the buns with egg wash. Sprinkle with sesame seeds if desired.
  • Preheat the oven to 350°F. Remove the plastic wrap. Bake for 24-26 minutes, until the buns begin to turn golden brown.
  • Remove from the oven and turn the buns out onto a wire rack to cool completely. Slice and serve.

Notes

Gluten-Free Flour: King Arthur Gluten-Free Bread Flour is required to achieve these easy, soft hamburger buns. Other gluten-free flour blends will not work.
Dairy-free: Use coconut or soy milk powder and vegan butter in place of the whole milk powder and butter.
To Make-Ahead: Make the dough, portion into the prepared pan, and smooth tops with wet fingers. Cover with oiled plastic wrap and refrigerate overnight (no more than 24 hours). The next day, let the dough sit out at room temperature for 60-90 minutes (until they’ve clearly puffed up) and then continue with the egg wash and baking.
To Store: Store cooled buns in an airtight container at room temperature for up to 3 days.
To Freeze: Let cool completely, then wrap individually in plastic wrap, and place in a freezer bag or airtight container. Freeze for up to 3 months. Thaw at room temperature for 30 minutes or in the fridge overnight.

  1. Thanks so much for the recipe. Tired of paying $7 for a 4 pack of Udi’s buns.
    First batch came out perfect. My son thought they were a little too buttery so I made another batch with olive oil instead of butter. They didn’t rise very well so are more like biscuits than buns but still edible. Do I need a different amount of oil, or do I need to do something different.
    Also, I could not get my tops to be as smooth as yours, Is there a limit to the smoothing with wet finger you can do before hurting the dough?

    1. Hi Robert! We’re so glad you enjoyed your first batch! The butter is an important part of this recipe, so we don’t recommend substituting oil. The butter helps give these buns their soft, tender texture and contributes to the rise, so swapping it for oil can result in a denser, more biscuit-like bun. For smoothing the tops, you can be pretty generous with the wet fingers. Gently smooth the dough until you get the shape you want, but avoid pressing down firmly enough to deflate it. The dough is quite sticky, so keeping your fingers wet as you work is the key. Happy baking!

  2. Thank you for sharing your recipes. You pointed out that the recipe would not work with any other flour except the ” King Arthur Gluten-Free Bread Flour”. This flour has wheat in it so it is not truly Gluten-Free. They do make another Gluten-Free flour, “Measure for Measure” that has no wheat in it. Would you happen to know if this flour would work? I would love to have a burger on a roll!

    1. Hi Terri! The KA GF Bread Flour contains certified gluten-free wheat starch so it is gluten-free, it’s just not wheat-free. It is suitable for those who need gluten-free diets, but isn’t safe for those with wheat allergies. We often use the KA GF measure-for-measure flour in recipes, but these hamburger buns were specifically designed with the KA GF Bread Flour. Other blends won’t create the same results unfortunately.
