Storage Instructions
Once baked, these cookies can be stored in an airtight container at room temperature for up to 3 days.
Make-Ahead/Freezer Instructions
As with many other cookie recipes, I usually make a batch of dough, then bake half and freeze the other half.
When you want a cookie, just bake the frozen dough by adding 2-4 minutes onto the cook time. These are perfect to have on hand for those nights when you just need a little something sweet!

Great recipe but it makes way more than 2 dozen at tbsp size 🙂 I used swerve brown sugar to cut carbs and 1/2 the chocolate chips and still tasted great, this diabetic thanks you!
Love them !
Oh wow.
I made these today. 9/10/2018
I followed the recipe just as it is other than I used mega chocolate chunks instead of chips. And I omitted the nuts.
I did put the dough in the fridge for 30 minutes as suggested.
I think the cookies spread on just right.
They turned out awesome. I think they are the best gluten free, grain free cookies I’ve made.
Thank you for this recipe.
What is the nutritional info for these?

I followed recipe as presented, however cookies did not spread…. 🙁
Just took them out of oven so haven’t tried them The dough however is addictive. 🙂
Totally awesome. My husband can be picky, but he loves baked goods. He tried these and ask to take some on the road with him. (Over the road trucker). Thank you so much for the recipe.
How many net carbs per cookie? They are fabulous!!
Hi! I love these cookies! I took your advice and made a dozen and froze the rest so i wouldn’t eat to many lol. My question is, do you know how many carbs and calories one cookie has? I didn’t see that on here, might have missed it. Thank you!
Kelly

I kove theses cookies. They are very tasty and healthier alternative. I’ve made them twice already, but for some reason my cookies don’t spread out like the pictures in here. They stay in a round shape. I’m not sure what I’m doing wrong. I am following the recepy exactly how it is in here. Please help!!
I’m confused. I rolled these into balls in hope that they would spread like a cookie while baking. I made half of the batch just slicing the recipe in half. The consistency seemed perfect when I put them into the over but left them in for 15 min and still were in the same form. Help!!!
Recently placed on a low carb diet. Haven’t baked a sweet treat in over a month. I made this recipe tonight. Faboulous! I’ll be freezing the dough as suggested and am thrilled that I can treat myself to a yummy chocolate chip cookie from time to time.
These cookies are amazing! My entire family loves them! The only thing I did different when I made them the 2nd time was didn’t add all the coconut oil. Still turned out great. Making them again today! Thank you for sharing the cookies!
