Storage Instructions
Once baked, these cookies can be stored in an airtight container at room temperature for up to 3 days.
Make-Ahead/Freezer Instructions
As with many other cookie recipes, I usually make a batch of dough, then bake half and freeze the other half.
When you want a cookie, just bake the frozen dough by adding 2-4 minutes onto the cook time. These are perfect to have on hand for those nights when you just need a little something sweet!

Just made these for my work and they lasted just over an hour! Staff gobbled them up. I received all great feedback on how delicious they were. Moist, flavorful, melted in your mouth goodness. I will definitely be making these cookies again!
These are fantastic!!
Love these cookies! Made them twice, even my husband loves them & he’s not on keto diet!
For the coconut oil, is it better to use liquid or the solid form?
These were great! I used Sukrin Gold (brown sugar substitute), and it worked wonderfully. However, mine don’t spread much at all… should I add another egg or more butter or coconut oil to make the dough a little thinner perhaps?
Can you tell me carbs per cookie.

PS: They are really good

Have anyone tried using monk fruit sweetener instead of brown sugar or coconut sugar. It is supposed to be 3 times sweeter than normal sugar. So wondering how much to use for this recipe. Monk Fruit sweetener is very healthy.
