Tips for Making the BEST Gluten-Free Cakes!

There are a few tricks to making delicious gluten-free cakes at home. After years of gluten-free baking, here are my top tips.

  • Use gluten-free 1:1 baking flour: Gluten-free cake turns out best when you use a high-quality 1:1 gluten-free flour. Look for a gluten free flour blend that contains xanthan gum so the cake has the structure it needs. This is my favorite brand.
  • Substitute butter for sour cream/oil: This combination adds richness and tenderness to the cake without weighing down the crumb.
  • Add a bit of lemon juice: Lemon juice helps to tenderize the crumb and reacts with the baking soda to create a light and amazing gluten free cake.
  • Alternate wet/dry ingredients: Adding the dry ingredients alternately with liquid ingredients ensures the flour absorbs into the batter. This prevents dry, grainy gluten-free cake.
  • Use the right pans: It’s best to make most gluten-free cake using two 8-inch round cakes or one 9×13-inch cake. Here are my favorite 8-inch round cake pans, which are amazing quality for the price! I love this 9×13 glass pan too!
  • Add salt to frosting: If you want amazing buttercream frosting, be sure to whip thoroughly, then add a pinch of salt to even out the sweetness!
