Storage Instructions
Once baked, these cookies can be stored in an airtight container at room temperature for up to 3 days.
Make-Ahead/Freezer Instructions
As with many other cookie recipes, I usually make a batch of dough, then bake half and freeze the other half.
When you want a cookie, just bake the frozen dough by adding 2-4 minutes onto the cook time. These are perfect to have on hand for those nights when you just need a little something sweet!

Can I substitute vegetable oil for the coconut oil?
Hi Pam! Since vegetable oil is liquid at room temperature while coconut oil is solid, it may cause the cookies to spread a little more, but overall it should work okay in this recipe. We hope you love the cookies!
Can I substitute the butter with shortening or other dairy free alternative?
Hi Lauren! We haven’t tried these cookies dairy-free, but we would start with a dairy-free stick butter. Another reader shared they used coconut oil and, though it made the cookies more oily, they still turned out well. We hope these ideas help. We’d love to hear how it goes!
Can you substitute with coconut flour?
Hi Erin! Coconut flour absorbs moisture quite differently than almond flour so we don’t recommend it as a 1:1 swap. It’s best to use recipes that are specifically designed for coconut flour to get the right results. Thank you for your question!
