It’s no secret I love creating new cookie recipes! Over the years, I’ve become known for my gluten-free cookies, especially my 12 Days of Gluten-Free Christmas Treats at the start of December. It’s the perfect excuse to create even more new recipes each year!

This family-favorite gluten-free biscotti recipe is one of the cookies I look forward to most each Christmas. I love dunking them in a hot cup of coffee! Last year, I also shared the easiest gluten-free shortbread I’ve ever made.

A plate of chocolate-dipped almond biscotti next to several shortbread squares, one with a bite taken out.

And it wouldn’t be Christmas without cookie decorating! I’ve perfected my gluten-free gingerbread cookies to be soft and chewy while still holding their shape.

Then there are these foolproof gluten-free spritz cookies. They look impressive, but are actually so easy to make. I use this cookie press and a silicone mat to line my baking sheet. Both of these classic holiday cookies are even more fun when you decorate them with family and friends!

Three gingerbread cookies decorated with white icing on a white plate next to a baking sheet filled with rows of wreath and star-shaped butter cookies.

Finally, I love adding a minty cookie (or two or three!) to round out the holiday flavors. I use Andes Peppermint products in these fudgy gluten-free chocolate mint cookies and my Swig-inspired gluten-free peppermint sour cream sugar cookies.

If you’re short on time, I also recommend these gluten-free peppermint meltaways. In about 30 minutes, you’ll have the cutest melt-in-your-mouth mint cookies!
