When soup season rolls around, this recipe is always one of the first in my dinner rotation. It’s the perfect comforting chicken soup that my whole family loves. It’s flavorful, hearty, and easy to make.

How to Make this Recipe

- In a large pot or dutch oven, heat the butter over medium heat. Add the onion, carrots, celery, ½ teaspoon salt, ½ teaspoon pepper and cook for 10 minutes or so, until softened.
- Add the garlic and cook for another 30 seconds.
- Stir in the chicken stock, bay leaves, thyme and chicken thighs. Bring to a boil, then reduce to a simmer.

- Partially cover the pot with a lid and cook, stirring a few times until the chicken thighs are cooked through and pasta is al dente; about 20 minutes.
- Remove the cooked chicken onto a plate. Add the gluten-free egg noodles to the simmering soup. Cook for 8-10 minutes.
- Meanwhile, dice or shred the chicken into small pieces. Add the shredded chicken back to the soup along with the fresh parsley. Season to taste with salt and pepper. Enjoy!
Storage Instructions
Store homemade chicken soup in an airtight container in the fridge for up to five days. (Let cool before storing.) Alternatively, you can store it in a freezer-safe container in the freezer for up to three months.

It’s been so cold here and we’ve been making lots of different kinds of soups, this one is always a family favorite.. The noodles hold up nicely too and it has just the right amount of comforting flavor (not overly herb-y like some recipes)
