  • Blueberries: Likewise, it’s best to use fresh blueberries for this fruit salad. Frozen fruit simply won’t give you the same flavor and texture.
  • Mandarin oranges: You can use canned or fresh Mandarin oranges in this recipe.
  • Raspberries: Again, I recommend using fresh raspberries for this fruit salad.
  • Grapes: I use green grapes to add more diversity of color to this fruit salad, but red grapes would also work.
  • Apple: I like the tang and color of green apples best for this recipe.

FOR THE FRUIT SALAD

  • 1 cup blueberries
  • 1 cup raspberries

  • 1 11-ounce can mandarin oranges, drained
  • 1 tablespoon fresh lemon juice

    Loved the recipe and was super easy to follow. Found mascarpone at the local grocery store near the deli. Used Silk yogurt instead of regular yogurt and was pleased with the overall flavor.

    Turned out awesome! I couldn’t find any marscapone in my store, so I used Philadelphia cream cheese as a substitute. I also forgot to put the apples in. But everyone still loved it at Easter lunch 🙂 The sauce is super tasty but not overly sweet and does not overpower the fresh fruit.

    I drained the mandarin oranges and also put the fruit between paper towels in a bowl after rinsing them to keep the wateriness down.

    I cut the fruit at 7AM, keeping the raspberries separate so they didn’t get squished. I put a bit of lemon juice over the fruit before wrapping it and putting it in the fridge. I finished the sauce and put that in a separate container at 10:30AM. Then they were all mixed together at 2:00PM. Nothing was mushy and it all tasted so good.

    I am now having another helping at 8:00PM as I write this

  3. Can I make the honey marscapone the day before or does that need to be done right before mixing with the fruit?

      Very easy to follow, all ingredients were found at my local aldi’s and giant foods. At the last minute I added chopped walnuts and they added a nice crunch with the apples. Thinking maybe next time to replace one of the fruits w pineapple but its delicious just as it is

  5. You don’t say how many servings the Easter Fruit Salad provides. I ask because most other fruit salad recipes I see online have way more ingredients. Should I double this for 6 people?

    1. The recipe says 8 servings. I think always depends on serving size of course – but I think alongside a big meal it’s enough for 6-8 people. I hope this helps!
