I also love adding a touch of salt and real vanilla extract to bring even more flavor and depth to this simple dessert.

These gluten-free, no-bake treats are a total crowd-pleaser. You just need gluten-free crispy rice cereal and gluten-free Oreos to make them safe for a gluten-free diet. No one will know the difference!

Plus, they’re SO easy to make. They come together in just a few minutes and don’t require you to turn on the oven. You could even make them in the microwave, if you really wanted to.

Ingredients You’ll Need

Here’s what you’ll need to make this gluten-free treat!

  • Gluten-free crispy rice cereal: Not all crispy rice cereal is gluten-free, so make sure you’re buying one that is clearly labeled as such! Rice Crispy treats in the blue box are NOT gluten-free, since they contain malt flavor. Some of my favorite gluten-free brands include Malt O Meal, Wegmans, Erewhon, and Aldi brand.
  • Gluten-free Oreos: Regular Oreos are NOT gluten-free, so make sure you’re buying the ones that have a gluten-free label if needed. You could also use another brand of gluten-free chocolate sandwich cookies. Check on this blog post on are oreos gluten-free.
  • Vanilla: I always prefer real vanilla extract for baking!
  • Salt: I like using kosher salt in this recipe — the larger flakes add the perfect texture and saltiness!
  • Butter: I always prefer salted butter for baking. It has more depth of flavor and adds so much to these rice krispie treats! I also like to brown the butter for even more depth of flavor!
  • Marshmallows: You can use large or mini marshmallows for this recipe. Mini marshmallows tend to melt a little faster and more evenly! Check out this post on are marshmallows gluten-free.

How to Make This Recipe

  • Line a 9×13 pan with foil and spray with cooking spray. Set aside.

  • In a large saucepan, melt the butter over low to medium heat. Once the butter is melted start to whisk constantly. First the butter will begin to foam, then after a couple of minutes it will begin to brown on the bottom of the saucepan.

  • Once the butter is browned and toasted, add the marshmallows and cook on low, stirring constantly with a rubber spatula or wooden spoon until mostly melted. (A few small lumps here and there are okay.)
  • Remove the melted marshmallow mixture from the heat and stir in the vanilla and salt.

  • Add the cereal and Oreo cookie pieces, then stir until well combined. 
  • Scrape the mixture into the prepared pan and using lightly greased or barely wet hands, lightly press the mixture into the pan. Let cool for at least 20 minutes before slicing. Enjoy!

Are rice Krispy Treats gluten free?

It depends! Most regular rice crispy treats are not gluten-free, because Rice Krispies (in the blue box) are not gluten-free. They are made with malt flavoring, which contains gluten. However, there are several other brands making certified gluten-free crispy rice cereal. Any rice crispy treats made with these cereals are safe to eat on a gluten-free diet.

Are Kellogg’s Cookies and Cream Krispies gluten free?

No, Kellogg’s Rice Krispies cereal is not gluten-free, including the Cookies and Cream variety. This rice krispie cereal is made with malt syrup, which is made from barley and contains gluten.

Can celiacs eat rice crackers?

It depends. Most rice crackers are gluten-free, but some contain extra ingredients that include gluten. To be sure, read the ingredient list and look for a “gluten-free” label.

Expert Tips & Tricks

  • There are several brands that make certified gluten-free crispy rice cereal. Check to make sure there isn’t any malt flavor listed in the ingredients, since malt flavor contains gluten. Rice Krispies in the blue box are NOT gluten-free.
  • Browning the butter makes such a difference in the flavor of these rice krispie cereal treats. Don’t skip this step! It adds complexity and depth you simply can’t get with regular melted butter.
  • Want even more marshmallow goodness in your Oreo krispie treats? Try leaving a handful of miniature marshmallows out and then adding them at the very end (don’t melt them with the butter.) This will give you large pieces of gooey marshmallows! Or you can just add extra marshmallows at the end! (I wouldn’t add extra melted marshmallows, or the homemade rice krispie treats won’t stay together.)
  • Feel free to get creative with your Oreo rice krispies treats mix-ins! White chocolate chips, melted chocolate, or mini semi-sweet chocolate chips would make a delicious dessert! You could also try different flavors of Oreos. Peanut butter Oreos or golden Oreos could make a fun variation on this classic treat!

  • ½ cup (113g) butter, softened
  • 20 ounces (567g) marshmallows, large or mini
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 7 cups (198g) gluten-free crispy rice cereal, see note
  • 20-24 (227-284g) Oreo cookies, coarsely chopped or crushed

Instructions 

  • Line a 9×13 pan with foil and spray with cooking spray. Set aside.
